We harvest 100% organic Blue Weber Agave by hand, selecting each plant at peak sugar levels to deliver the bold, agave-forward flavor that defines Cazcanes. Once harvested, the piñas are slow-cooked and passed through our roller mill to extract their rich, natural sweetness.
We cook our agave using a low-and-slow autoclave process: 8 hours under gentle pressure, 8 hours of residual heat, and 8 hours of natural cooling. This deliberate method preserves the plant’s sweetness while unlocking deep, complex flavors.
Our tequila is double-distilled in stainless steel stills with copper coils. Under the guidance of Master Distiller Don Chico, we carefully monitor each run, selecting only the most expressive cuts to ensure a balanced, flavorful spirit in every batch.
