Cazcanes No.7 Extra Añejo is a small-batch tequila aged for an average of 37 months in re-charred American oak barrels sourced from Jack Daniel’s, Jim Beam, Clermont, and Four Roses. Blended to taste—not to time—this tequila is carefully aged to preserve bold agave character without being over-oaked.
Crafted in Amatitán, Jalisco, using 100% organic Blue Weber agave and natural volcanic spring water trucked in from Navichi Springs near Hostotipaquillo, Jalisco. A small portion of the tequila was finished with French oak staves for added depth, then carefully integrated into the final blend to bring refined complexity, enhanced texture, and layered nuance.
The result is a balanced, expressive Extra Añejo with notes of roasted agave, vanilla, dark chocolate, butterscotch, oak, dried fruit, and warm spice, all leading to a long, harmonious finish.

Craftsmanship

Our Extra Añejo is aged to taste, not time, ensuring that each batch is a carefully curated blend of barrels selected to create the most flavorful and balanced expression possible. While the minimum aging requirement for an Extra Añejo is 36 months, we go beyond simply meeting this standard. Instead,
We meticulously sample and blend barrels that have reached their peak character, allowing the interplay between agave and oak to dictate the final profile.
Made from 100% Organic Blue Weber Agave, harvested at peak sugar levels, this tequila is aged in used American Oak barrels that are reworked and recharred to our specifications. Each barrel is chosen for its unique contribution to the final blend, enhancing depth, complexity, and structure.
The agave is gently cooked in a low-pressure autoclave over a 24-hour cycle, a process we use to preserve and intensify the agave’s pure flavors. The juice is extracted using a roller mill with four passes and blended with our exclusive volcanic spring water from Navichi Springs, Mexico, which is trucked in for
each production to ensure the highest quality and purity. Fermentation occurs in stainless steel vats with our proprietary yeast, followed by double distillation in stainless steel pots with copper coils. The tequila is certified organic, kosher, and verified additive-free.

THE LOST ART OF TEQUILA MAKING

In today’s world of industrialized tequila, shortcuts are common, and authenticity is often the first thing sacrificed.

At Cazcanes, we’ve chosen a different path—reviving the traditional, time-honored methods that defined tequila before it became a commodity.

This isn’t just tequila—it’s the revival of a lost art.
