Pekin Red Dragon

Cazcanes Pekin Red Dragon

1 ½ oz Cazcanes No.7 Reposado

3 oz beetroot & ginger water (see instructions below)

1 oz fresh grapefruit juice
-
¾ oz ginger syrup
-
½ oz fresh lime juice
-
½ oz olive brine
Garnish: Olive skewer and mint
Glass: Hurricane glass
Instructions:

Prepare the beetroot & ginger water:

Combine 4 parts beetroot, 1 part ginger, and 4 parts water in a blender.

Blend thoroughly and strain the mixture to remove any solids.

Add Cazcanes No.7 Reposado, 3 oz of beetroot & ginger water, grapefruit juice, ginger syrup, lime juice, and olive brine to a shaker filled with ice.

Shake well and strain into a hurricane glass filled with fresh ice.

Garnish with an olive skewer, and fresh mint
