Cazcanes Pekin Red Dragon

• 1 ½ oz Cazcanes No.7 Reposado

• 3 oz beetroot & ginger water (see instructions below)

• 1 oz fresh grapefruit juice

• ¾ oz ginger syrup

• ½ oz fresh lime juice

• ½ oz olive brine

Instructions:

1. Prepare the beetroot & ginger water.
2. Combine 4 parts beetroot, 1 part ginger, and 4 parts water in a blender.
3. Blend thoroughly and strain the mixture to remove any solids.
4. Add Cazcanes No.7 Reposado, 3 oz of beetroot & ginger water, grapefruit juice, ginger syrup, lime juice, and olive brine to a shaker filled with ice.
5. Shake well and strain into a hurricane glass filled with fresh ice.
6. Garnish with an olive skewer, and fresh mint
